Rava/Semolina Muffin

This recipe i got from my Malt-O-Meal box,Its a quick and easy recipe and i liked the taste too.
This is called MAlt-O-Meal magic Muffin Recipe.
MAlt-O-Meal is basic sooji/semolina with some malt in it.

All-purpose flour/ Maida - 1 ¼ cups  
Rava / Semolina / Sooji - ¾ cups
Sugar - 1/2 cup
Milk - 3/4 cup
Oil - 1/4 cup , i used cannola oil
Egg - 1
Baking Powder - 1 tbsp
SAlt - 1/2 tsp
Vanilla - 1 tsp


  1. Pre-heat oven to 400°F
  2. In a large bowl, combine all ingredients
  3. stir together until ingredients are just moistened.
  4. Spoon into a greased or paper-lined 12-cup muffin pan, filling cups ¾ full.
Bake for 18 to 20 minutes or until toothpick inserted in center comes out clean.

For Other Variations:

For Corn Bread recipe,
Add and incorporate one 8.5-ounce can cream style corn to above recipe and Pour muffin mixture into a greased 13×9-inch pan and bake for 19 to 20 minutes, or until edges are lightly golden and toothpick inserted in center comes out clean. 

For Banana Muffins add ¾ cup mashed bananas to basic ingredients and follow the basic muffin baking instructions.

Sweet Corn Veg Soup

Hmmm are you wondering 'coriander leaf' in sweet corn soup ??? Trust me its good.
When ever i go to any IndoChinese Restuarant the first thing i order is sweet corn soup.We have a beautiful IndoChinese Restaurant here near our place called Bamboo Garden and they serve two types of sweetcorn soup one is picy andother regular.Usually i will always get this regular one but during my last visit we ordered the spicy one and its regulat soup topped with finely chopped fresh coriande and green chillies and i have to tell i am impressed.So my next step is to try that at home and here is the recipe.
As we are adding green chillies there is no need to add any extra sauce or chilli vinegar to make the soup spicy .The soup is so subtle like regular corn soup but with hint of spicyness from chillies and flavour infused from coriander leaf makes it special.
Why don't you try this recipe,if you go bonkers like me for sweet corn soup and its a quick recipe you can put it all together in 15 min..
If you prefer chicken in the soup poach chicken by my poaching chicken recipe and shred them and add it to the soup.


Cream Style Corn - 1/4 cup
Vegetable stock - 2 cups
Frozen mixed vegetables - 2 to 3 tbsp(mine has carrot,lima,beans,corn,mushroom)
Coriander leaves and green chillies - finely chopped 1 tbsp
Corn starch - 1 tbsp mixed with a tbsp of water
Optional Sauces - soy sauce - 1/4 tsp,chilly sauce - 1/4 tsp,vinegar - 1/4 tsp ( i didn't use any sauce to soup because i like to add it to my soup as my preference when i am having it)


Add corn,vegetable stock ,frozen vegetables in a soup pot and let it come to boil,add salt only if needed as the vegetable stock may have some salt in it.
Once all vegetables are cooked it may take 5 to 7 min,add cornstarch mixture this helps to thicken the sauce.
Finally switch off flame and add coriander leaves and green chillies.
Serve hot .Add sauce if any needed according to your taste.

Chia Coconut Milk Pudding

CoconutMilk chia Pudding is one of my favorite dessert .ITs healthy and guilt free dessert and you can put everything together in a jiff and put in refrigerator for few hours to get a creamy pudding.
For those who doesn't know chia seeds -  Chia seeds reduce food cravings, help you stay hydrated, lower blood pressure & are rich in Omega-3. Check the following link for more benefits of chia


Chia Seeds - 3 tbsp
Coconut Milk -14 oz can
Dates Syrup - 2 tbsp or as needed
flax meal (optional) - 2 tsp
Vanilla essence - 1/2 tsp ( optional),also can use cardamom pd,cinnamon pd for different flavours.


Mix all and put it in refrigerator for 4 hrs or even overnights
Serve chill.

Chicken Dhal & Rice Soup

So this is the recipe i made for my kids luncheon.I want all those kids to get the wholegrains,fibre and nutrients and protein from a single dish.So i decided to make this dish like a gumbo.
For protein this dish has chicken and dal,but if you are a vegetarian just go with dal and leave chicken out or you can also add soya nuggets for extra texture.
For nutrients and fibre this dish has lots of tomatoes , spinach and coriander leaves.And for the whole grain i added rice to it.
Its a complete hearty dish and you can put it up faster if  you have all ingredients cooked and ready.
So if you are trying to find a dish which is healthy at the same time easy to make try this recipe ,you will definitely like the taste.


Mixed Dhal - 1 took 1/4 cup MAsoor,1/4 cup Moong,1/4 cup Channa Dhal and boiled it with thrice the amount of water for 5 whistles and mashed it .
Cooked Rice - 1 cup or more as needed.
Poached Chicken breasts - 2
Spinach leaves - 1 cup
Toamto - 2 medium finely chopped
coconut oil / ghee - 1 tsp
Cumin Seeds - 1 tsp
Mustard Seeds - 1 tsp
Coriander pd - 1/2 tsp
Cumin powder -1/2 tsp
Turmeric pd - 1/2 tsp
Salt - as needed
Coriander leaves - for garnishing
Lemon or lime - 1 


1.In a pan add ghee/oil and add mustard seeds,cumin seeds and wait till they splutter,then add spinach leaves and saute it a bit.
2.Then add chopped tomatoes and coriander powder,turmeric powder , cumin seeds powder and saute it along with salt till tomatoes are mashed up.
3.Add Water if the mixture is getting dry.
4.Then add shreaded chicken pieces and mix it.To know how to poach chicken check my poachedchicken recipe.
5.Add needed water/broth and dhal and let it come to a boil.Then add cooked rice as much needed and thin the soup if needed

6.Garnish with coriander leaves and finally add juice of 1 lemon or lime before serving.Serve it hot.

Popped Lotus Seeds

Ya you read it right,its popped lotus flower seeds.Its just like popcorn.I didn't knew it till now that this thing is made from popping lotus seeds.
Now i am admired by lotus plant,whats is not used out of lotus - its flower,stems,leaves,seeds wow...
You get this in indian store in popped form.You can toast it a little to bring back the crunchiness .
I just flavoured it by my usual method i used to flavour puffed rice.
So here is the recipe if you are interested.

Ingredients :

Coconut oil - 1 tsp
Popped Lotus Seeds (phool makhana) - 4 cups
Turmeric pd- 1/2 tsp
Salt (use fine powder one, not granulated one It won't stick to popped seeds) - as needed
Dry red chillies broken - 2 or more
Curry leaf - 1 sprig


1.In a big pan add oil, once it's hot remove from stove and add turmeric pd, salt, red chilly and curry leaf, saute it in residual heat.
2.Add popped lotus seeds and mix well and then put in flame and keep stirring untill all pops are uniformly heated.
3.Serve crunchy lotus seeds.

Perfectly Poached Moist Chicken Breast

Poaching Chicken Breast is good as its an oil free cooking process and this can be stored in refrigerator for adding to soups,tacos,salads.
But the problem we face sometimes is these poached chicken breasts can tend to become dry and less juicy,this can happen by overcooking the breasts.So here is an error free method to get a juicy ,tender chicken breast.

Chicken Breast
Onion - 1/2
Ginger Garlic Paste , herbs (optional)
SAlt -1/2 tsp


Take Chicken Breast in a pan and fill it with water with 1 inch above it to cover.Then put it in stove and bring it to one rapid boil,then put the flame in lowest setting and cover and boil for 8 min.
then switch off flame and remove pan from heat and let that breast along with liquid covered rest for 10 min.
Then remove breast and shread it with fork.You can leave the breast in water and leave it in refrigerator to store ,storing it in water keeps it moist.
For flavour i added 1/2 onion and a tsp of ginger and garlic paste with 1/2  tsp salt to the liquid,You can add any herbs or spices to your preference.

Sambar Upma

A spicy twist to regular Upma with lot of vegetables ,coconut and soya nuggets.
Like Sambar rice this is sambar Upma.


Semolina - 1 cup
Ghee - 2 tsp or more if you prefer

Mixed vegetable of your preference - 2 cups diced
I used Potato,carrot,celery,peas,Soya Nuggets

Turmeric Pd - 1/2 tsp
Sambar Powder - 3 tbsp
Tamarind Paste - 2 tsp
Salt - as needed
Water - 3 cup instead of water you can also cook the semolina in thin coconut milk 
Coriander Leaf - for garnishing

Mustard Seeds - 1 tsp
Hing - a pinch
Curry leaf - 1 sprig
Dry nuts like cashew,almonds if you prefer
Coconut - 1/2 cup shreaded
Heavy Cream ( optional) - to add at the end of cooking like a tbsp


1.In a pan roast semolina with a tsp of ghee until its fragrant and roasted and keep it aside.
2.In the same pan add extra one more tsp of ghee and add mustard seeds ,curry leaf and hing as tempering.
Once mustard seeds splutter add dry nuts if using any now and roast it to golden and then add veggies and saute it with turmeric.
3.Then add a cup or two of water until veggies are covered in water,add soya nuggets to oat this stage and add salt.Cover and cook until the nuggets are soft throughout and the veggies are cooked.
4.Open lid and add sambar powder and roast it a min and add tamarind paste and cover and cook for 2 more min.Then open lid and cook till its almost dry.

5.Add 3 cups of water,coconut shreaded and coriander leaf and give a stir and add salt if any needed.
6.Then add semolina and keep on stirring and let it cook.
7.Soon all the water will be absorbed and the mixture will get dry like below pic.

Garnish with Coriander Leaf.Serve hot with sprinkle of some more nuts on top and  a coconut chutney.Add Cheese on top if you desire.

Appam in Dosa Style

Aapam is one of the kerela staple breakfast recipe.Normally appam batter is made by grinding saoked rice and coconut and then fermenting it .The fermentation is usually done by adding some fermenting ingredients like cooked rice , toddy from coconut tree or cocnut water is fermented and added to batter to ferment more.So even though the ingredients used in this recipe are less the time needed for it to fermenting and prepearing the fermenting agent is little extra work.
But dont panic i found a easy way to ferment these batter with the ingredient that is easily available in any area ie, yeast.
Just add yeast to the batter and let it sit for 4 hrs ,the batter will be fermented.
Now a days appam mix is also available in shop, we can just get the mix and add water and let it sit and you will get a nice aapam batter in few hours.

To make aapam with yeast:

  1. Soak 2 cup rice for 6hrs then blend in the blender by adding 1 cup grated coconut and 2 tbsp of sugar to a fine paste.You can also use coconut milk instead of coconut.The batter should be thin and runny.
  2. Take warm water add dry yeast and a tsp of sugar and wait till it gets foamy then add to the batter along with needed salt and keep it for 4 hrs in a warm area,the batter will be fermented(you can also ferment it overnight)
  3.  Once the batter is Fermented take aapam tawa or Dosa tawa rub oil and pour the batter and rotate and cover with the lid , then once the aapam is cooked remove lid and cook in open flame for a min to get a crispy sides of aapam ( if using dosa tawa flip it to the other side like dosa after opening the lid , i love this method of cookign aapam in dosa tawa because i like crispy edges of aapam more than fluffy center so i started using dosa tawa to get uniform crispy aapam even in the center,thats just me)

To make aapam by store bought mix:

There will be a fermenting mix in the package ,cook that according to the package instruction and add this to the dry flour along with coconut milk and let it sit for few hours and then make aapam as usual.
Usually the store bought mix dont make a great aapam in aapam tawa so if it happens to you just use dosa tawa and make like dosas,it will taste great.

Enjoy aapam with some spicy dish like potato masala , chicken or mutton curry or even spicy chutney.

Coconut Onion Chutney


Small Pearl Onion chopped - 1/2 cup
Coconut shreaded fresh - 3/4 cup
Chilly pd - 1/2 tsp
Garlic clove - 1
Salt - as needed
Water - as needed
Coconut oil -1 tsp
Mustards Seeds - 1 tsp
Urad dAl - 1 tsp
Channa Dal - 1 tsp
Hing - a pinch
Curry leaf - 1 sprig
Dry Red Chilly - 1


Grind Coconut , chilly pd, salt , garlic clove to a fine paste by water and keep it aside.
1.In a pan add oil,then add mustard seeds,once they splutter add urad dal,channa dal and let it get golden then add curry leaf and hing.
2.Then add chopped onions and saute it till they are light golden.
3.Then add ground coconut mixture and needed water and keep in medium flame and wait till it gives one boil.
4.Switch off flame and serve it with aapam ,dosa or idly.
