A spicy twist to regular Upma with lot of vegetables ,coconut and soya nuggets.
Like Sambar rice this is sambar Upma.

Ingredients:


Semolina - 1 cup
Ghee - 2 tsp or more if you prefer

Mixed vegetable of your preference - 2 cups diced
I used Potato,carrot,celery,peas,Soya Nuggets

Turmeric Pd - 1/2 tsp
Sambar Powder - 3 tbsp
Tamarind Paste - 2 tsp
Salt - as needed
Water - 3 cup instead of water you can also cook the semolina in thin coconut milk 
Coriander Leaf - for garnishing

Mustard Seeds - 1 tsp
Hing - a pinch
Curry leaf - 1 sprig
Dry nuts like cashew,almonds if you prefer
Coconut - 1/2 cup shreaded
Heavy Cream ( optional) - to add at the end of cooking like a tbsp

Method:


1.In a pan roast semolina with a tsp of ghee until its fragrant and roasted and keep it aside.
2.In the same pan add extra one more tsp of ghee and add mustard seeds ,curry leaf and hing as tempering.
Once mustard seeds splutter add dry nuts if using any now and roast it to golden and then add veggies and saute it with turmeric.
3.Then add a cup or two of water until veggies are covered in water,add soya nuggets to oat this stage and add salt.Cover and cook until the nuggets are soft throughout and the veggies are cooked.
4.Open lid and add sambar powder and roast it a min and add tamarind paste and cover and cook for 2 more min.Then open lid and cook till its almost dry.

5.Add 3 cups of water,coconut shreaded and coriander leaf and give a stir and add salt if any needed.
6.Then add semolina and keep on stirring and let it cook.
7.Soon all the water will be absorbed and the mixture will get dry like below pic.

Garnish with Coriander Leaf.Serve hot with sprinkle of some more nuts on top and  a coconut chutney.Add Cheese on top if you desire.
