So this is the recipe i made for my kids luncheon.I want all those kids to get the wholegrains,fibre and nutrients and protein from a single dish.So i decided to make this dish like a gumbo.
For protein this dish has chicken and dal,but if you are a vegetarian just go with dal and leave chicken out or you can also add soya nuggets for extra texture.
For nutrients and fibre this dish has lots of tomatoes , spinach and coriander leaves.And for the whole grain i added rice to it.
Its a complete hearty dish and you can put it up faster if  you have all ingredients cooked and ready.
So if you are trying to find a dish which is healthy at the same time easy to make try this recipe ,you will definitely like the taste.

Ingredients:


Mixed Dhal - 1 took 1/4 cup MAsoor,1/4 cup Moong,1/4 cup Channa Dhal and boiled it with thrice the amount of water for 5 whistles and mashed it .
Cooked Rice - 1 cup or more as needed.
Poached Chicken breasts - 2
Spinach leaves - 1 cup
Toamto - 2 medium finely chopped
coconut oil / ghee - 1 tsp
Cumin Seeds - 1 tsp
Mustard Seeds - 1 tsp
Coriander pd - 1/2 tsp
Cumin powder -1/2 tsp
Turmeric pd - 1/2 tsp
Salt - as needed
Coriander leaves - for garnishing
Lemon or lime - 1 

Method:


1.In a pan add ghee/oil and add mustard seeds,cumin seeds and wait till they splutter,then add spinach leaves and saute it a bit.
2.Then add chopped tomatoes and coriander powder,turmeric powder , cumin seeds powder and saute it along with salt till tomatoes are mashed up.
3.Add Water if the mixture is getting dry.
4.Then add shreaded chicken pieces and mix it.To know how to poach chicken check my poachedchicken recipe.
5.Add needed water/broth and dhal and let it come to a boil.Then add cooked rice as much needed and thin the soup if needed


6.Garnish with coriander leaves and finally add juice of 1 lemon or lime before serving.Serve it hot.
