EggPlant - 1 medium size
Spinach - 1 cup
Frozen Mixed VEgetables -1 cup (You can use any vegetables of your choice)
Onion - finely chopped -1/2 cup
Tomatoes finely chopped -1/2 cup
Oil / ghee - 2 tsp
Cinnamon - 1/2 inch stick
Cardamom - 2
BAyleaf - 1
Cumin Seeds - 1 tsp
Salt - as needed
Turmeric Pd - 1/2 tsp
Chilly pd - 2 tsp
Coriander pd - 2 tsp
Cumin pd - 1 tsp
Garam Masala - 1 tsp
Coriander leaves - for garnishing
1.Grill the Eggplants . I used cast iron pan to grill them.But you can grill them whole in oven or gas stove and in that case peel skin as it may be charred.Once they are grilled ,remove them and let it cool ,then blend it to a chunky to fine paste according to your likeness.
2.Then in the same pan , add some oil and add cinnamon,cardamom, bayleaf , staranise and cloves and then cumin seeds and saute them till aroma is released then add finely chopped onions and saute them well,then add ginger garlic green chilly paste and saute them till all the raw smell is gone.
3.Then add finely chopped tomatoes and saute them well.
3.Now all these are charred enough in cast iron pan so i am moving it to non stick now,but you can do that in nonstick from beginning.
4.Then add Chilly pd , cumin pd , coriander pd , garam masala pd along with salt and mix them.
5.Then add spinach and mix them well.
6.Then add mixed vegetables , i used frozen mixed vegetables i had in my refrigerator. nad saute them till they are cooked well.
7.Then add Eggplant and mix them thoroughly and let it come to a boil,then check taste and do any adjustments if needed.
8.Transfer to a serving dish and garnish it with coriander leaves.
