Ingredients :

Shrimp  - 20 nose
Soya nuggets dry - 1 cup
Basmathi Rice - 3/4 cup dry,soaked in water for 20 min
Quinoa  - 1/4 cup dry,Soaked in water for 20 min
Onion - 1 large thinly sliced 
Oil - 1/4 cup ,to fry onions.
Mint Leaves - 1/2 cup

To Cook Shrimp :

Ghee - 3 tsp
Cinnamon Stick - 1
Cardamom - 2
Cloves - 4
BayLeaf - 1
DryPlum/ Aloo Bhukara - 6 ,this gives a sweet tangy Ness in briyani 
Star Anise - 1

To boil Rice and Quinoa :

Ghee - 1 tsp
Cinnamon Stick - 1 inch
Cardamom - 2 pods
Cloves - 4
Bay leaf - 1
Star Anise - 1
Cumin Seeds - 1 tsp
Shah Jeera - 1 tsp
Black Pepper - 10
Salt - 1 tsp 
Water  - 4 cups  to boil rice and Quinoa 
Mint Leaves - 1/4 cup

To Marinate Shrimp :

Ginger Garlic Paste - 1tsp each
Chilly Pd - 2 tsp
Coriander Pd - 1 tsp 
Cumin Pd - 1 tsp
Turmeric  Pd - 1 tsp
Pepper Pd - 1/2 tsp
Salt - as needed around 1 tsp 
Yogurt - 2 tbsp 
Oil - 2 tsp
Mint Leaves - 1/2 cup finely chopped 

Method :

Preparations : 

1.Marinate Shrimp with ingredients listed in "To marinate Shrimp" for 30 min in refrigerator. 

2.Boil Soy Nuggets with 2 to 3 cups water with a tsp of salt for 10 min and filter water and let it cool and then squeeze out excess water from nuggets and cut in half.
3.Fry Onions in oil and keep them drained and ready. I fried few mint leaves too.
4.Soak Rice and Quinoa in water for 30 min.

Steps:

To Cook Rice:


1.In a sauce pan add ghee and add all the spices listed in " To boil Rice" and saute them a min.
2.Add Mint Leaves and fry them a bit and add Water with salt.
3.Let it come to boil add Garam Masala Powder and then add Rice and Quinoa and let it come to boil and cook till its 80 % cooked.
4.Drain water and keep rice quinoa  aside, don't throw the water ,I used it to make salan recipe with it.It goes well with briyani. 

To Cook Shrimp and Assemble briyani :

1. In a wide nonstick  pan add ghee and add spices listed in the "To cook Shrimp" and saute them.
2. Then add marinated shrimp and roast it till it gets cooked,don't overcook it shrimp will become rubbery.5 to 7 min is enough or until the shrimp turns pink.
3.Add Soy nuggets and mix well with shrimp Masala and cook with it.
3.Then flatten shrimp into single layer so each shrimp is in contact with base of pan ( This gives a crisp shrimp finally).
4.Layer Rice in a single layer in top of shrimp soy nugget  mixture and then add fried onions in single layer.
5.Then add one more layer of rice and then again the fried onion, repeat this till all rice and onions are layered. 
6.Cover and keep flame in low and let it sit in Dhum for 30 min.Till now all shrimp and rice would be cooked completely but shrimp won't become crisp at bottom. 
7.Then increase flame to medium after 30 min or until you hear shrimp Crisping up sound and then switch off flame.
8. Squeeze in one lime juice and fluff the rice gently and serve hot with Salan.
