'Dal Baatti' one of the nostalgic food for my husband reminding the first day of his hostel food.He had no idea how to eat that when a hard roundule of crisp ball is in your plate along with some dal on the side.Later He found it how it should be consumed after several days of self exploration and research.
Baatti is a Rajastani Recipe in which wheat flour is made Into round big balls and is baked in tandoor to crisp outer and soft middle and then served with dal as "Dal Baatti" and sometimes the crumbled pieces are mixed with jaggrey and served as "Chooran".
Well I was little skeptic to try this recipe as i have not yet tried it anywhere. But have to tell it's the one of the most wonderful recipes I ever tried. Its more satiating and tasty too.And to add bonus point all you have to do is similar to chappathi dough and just make them into roundules and bake them, no need to stand in kitchen to make individual rotis as everybody knows Its time consuming and labor too...And as I told in my recent recipe blog that I am finding a way to spend some excess of wheat flour in my cabinet right now, and I feel this is an excellent, easy and tasty recipe that I can depend on....So if any body is interested try this you will definitely like this.....

Ingredients:

Whole wheat flour - 2 cups
Sooji - 1/2 cup
Ajwain(omam) pd - 1 tsp
Salt - 1 tsp
Whole Pepper coarsely crushed - 10 (optional)
Ghee - 2 tbsp
Baking Soda - 1/2 tsp

Method:

1.Mix all dry ingredients and add Ghee and mix thoroughly it's very well incorporated, this is like forming short crust which ensures crisp baatti.

2.Then add warm water little by little and make a tight dough stiffer than poori dough. Don't make soft dough.Don't overmix also it will become hard.

3.Make rounders of size of tennis balls.

4.Then flatten it into peda shape.

5.Then preheat your oven to high broil and grease a baking tray with ghee and place baatti's and place in middle rack and bake till its crisp and dry on the surface , it may take around 15 min.

6.Then take it out and flip side and grease little ghee on top and bake for 2 min then remove.

To serve:

Crumble one or two baafti's in a bowl and pour spicy lasooni dal on top of that and serve hot with pickle.
