Ingredients:

Spices:

Black Cardamom - 2
Green Cardamom - 2
Cloves - 4
Bay Leaves - 3
Cinnamon - 1 stick
Cumin Seeds - 2 teaspoon
Peppercorns - 1 teaspoon
Ginger Garlic Paste - 1 teaspoon
Chilli powder (optional) - 1/2 teaspoon
Cumin powder - 1 teaspoon
Coriander powder - 1 teaspoon

Vegetables :

Potato- 1 medium size
Onion- 1/2 cup
Carrot - 1 cup sliced
Fresh Mint Leaves -1 hand full / Dried Mint Powder - 1 tbsp
Fresh Coriander Leaves - 1 hand full
Green Peas - 1/2 cup 
Turnip - 1 medium size
Bok Choy / Any Green Leafy vegetable - 2 cups chopped
Broccoli - 1 cup
Green Chilli - 1 

Basmati Rice - 1 cup
Olive  Oil - 1 teaspoon
Ghee - 1 teaspoon 

Method:

1.Chop all vegetables and keep aside.
2.Wash Rice and soak it for 10 min
3.Take a pan and add oil and ghee ,once its hot add garam masalas .Once they give aroma add cumin seeds and pepper and roast it a min .

 4.Add Chopped onions and green chillies and saute them well.
 5.If you have mint leaves and coriander leaves then add it now.I had only mint powder so i added it and i didn't have coriander leaves so i left it.Saute a min.
 6.Now add coriander pd, cumin Pd and chilly Pd.(I made this recipe very mild so i added only 1/2 tsp of chilly powder ,if you want it spicy increase the amount of chilly pd and green chillies)
 7.Add little water and saute the spices well for the raw smell to go away.Add salt at this point.
 8.Then add all the vegetables ,give it a stir for 5 min then add 2 cups of water.
 9.Let the vegetables cook well.
 10.Once the vegetables are 80 - 90 % cooked add rice now and add extra 1/2 cup water.
 11.Let it come to boil then cover the lid and put it in very low flame and let it cook for 20 min.Don't disturb it.

 12.After 20 min open lid and check if rice is cooked well,if not let it sit for extra 5 min,but be sure not to open the lid in between which will let the steam escape and rice wont cook well.
 13.Switch off the flame once the rice is cooked.Squeeze a lime or lemon to the rice and give a gentle fluff and mix them.cover and let ti sit for 15 min before serving.

 14.Fluffy vegetable Biryani is ready
