A typical south Indian (Kerala) Version of Mutton curry.......




Ingredients:


Gingelly Oil - 1 tbsp(preferred...but u can use regular oil also)
Small Onion -  5 to 6 cut in to halves
Tomatoes - 2 medium size
Potatoes - 1 (cut in to cubes)
Coriander leaves - 2 twig
To increase quantity you can also add soya granules(1/2 cup raw) chopped to small pieces like mutton .
Lemon Juice - 1 tsp


For Masala:

Coconut Flakes - 1 cup
Dry Red Chilly - 20 nos
Coriander Seeds - 1 tbsp
Cinnamon - 1/2 stick
Cloves - 2
Cardamom - 2
Fennel Seeds - 1 tsp
Star Anise - 1
Bay leaf -1
Oil - 1 tbsp

To Pressure Cook:

Mutton - 1/2 kg (very small cuts)
Ginger Garlic paste - 2 tsp each
Turmeric Pd - 1 tsp


Method:


Pressure Cook all the ingredients listed above ....

Saute Masala ingredients till its light brown(be careful and keep sauteing or it will burn on one side and it will burn quickly)...and ground them to very fine paste by adding water.....

In a Pan take a tbsp of oil and saute small onion...then saute tomatoes ...then potatoes...and add water to cover potatoes and let it cook completely....then add mutton and ground masala....add salt and water accordingly ...when they are infused well and oil starts to float on top add a tsp of lemon juice...and switch off flame and garnish with coriander leaves......
