Mattar paneer :(from Hindi: मटर पनीर, mattar ("peas") and paneer ("farmer's cheese")) is a vegetarian north Indian dish consisting of peas and farmer's cheese in a tomato based sauce, spiced with garam masala.
It is often served with rice and an Indian type of bread (naan, paratha, poori, or roti depending on region). It is usually served as North Indian (Punjab) food. Various other ingredients are often added, such as "aloo" (potato), corn, yoghurt or cream (common in restaurants).

Mattar Paneer Gravy:



Ingredients:

Paneer /Cottage cheese - 14 OZ
Peas  – fresh or frozen 1 Cup
Water - 2 to 21/2 cups
Cream- 1/4 cup(optional)
Cumin Seeds / Preferably shah Jeera or Black cumin seeds - 1 tsp
Oil or Ghee or Butter - 2 or 3 tbsp
Coriander leaves for garnishing - 1/4 cup
Sugar as required and optional .

For Masala:

Oil - 1 tbsp
Tomatoes -3 medium sized chopped
Large onion, - 1 chopped in big size  and boiled in water for 15 min
Green chili - 3  slit
Ginger, chopped - ½ " and Garlic- 3 cloves/ Ginger GarlicPaste -  1 tsp each
Whole cashews- 1 tbsp
Turmeric Pd - 1 tsp
Salt
Coriander Pd - 2 tsp
Cumin Pd - 1/2 tsp
Chilly Pd - 2 tsp
Kasoori Methi/Dry Fenugreek Leaves - 1 tbsp.

Preparation:

1.Heat a pan add a tbsp of oil.
2.Add onion,green chillies and saute well til lonions are translucent.
Then add  cashews,turmeric pd ,salt and cook till onions are fully cooked.
3.Then add tomatoes and saute them well.
4.Now add cumin pd, coriander pd,chilly pd and kasoori methi and  saute them well.Add water if necessary to help cook the spices.
5.Now grind this to a fine paste and keep aside

Method:


1.Heat oil or ghee or butter
2.add ½ tsp Shah Jeera or Black Cumin seeds.
3.Once it splutter add the masala paste we made.
4.Saute it on a medium flame until the oil separates from the paste.
5.Now add the peas and mix
7.Cook for 5min till the Peas is cooked.
8.Now add  paneer cubes and mix it.
Don't overcook as the paneer will becomes dense and hard.
9.If using cream then add it now and switch off the flame.
9.Garnish with coriander leaves.

Serve  with rotis, parathas, naan or rice.

Tips:

If you are using dry peas,soak them in water overnight and cook for 4 whistles in pressure cooker and then use them .
