About Mattar Paneer


Mattar paneer :(from Hindi: मटर पनीर, mattar ("peas") and paneer ("farmer's cheese")) is a vegetarian north Indian dish consisting of peas and farmer's cheese in a tomato based sauce, spiced with garam masala.
It is often served with rice and an Indian type of bread (naan, paratha, poori, or roti depending on region). It is usually served as North Indian (Punjab) food. Various other ingredients are often added, such as "aloo" (potato), corn, yoghurt or cream (common in restaurants).

Ingredients:

Oil - 1 tbsp
Tomatoes -3 medium sized chopped
Large onion, - 1 chopped in big size  and boiled in water for 15 min
Green chili - 3  slit
Ginger, chopped - ½ " and Garlic- 3 cloves/ Ginger GarlicPaste -  1 tsp each(optional)
Whole cashews- 1 tbsp(optional)
Turmeric Pd - 1 tsp
Salt
Coriander Pd - 2 tsp
Chilly Pd - 1 tbsp
Paneer/Cottage cheese - 14 OZ
Peas  – fresh or frozen 1 Cup
Water - 2 to 21/2 cups 
Evaporated Milk / Cream / Yogurt- 2 tbsp(optional)
Oil or Ghee or Butter - 2 or 3 tbsp 
Coriander leaves for garnishing - 1/4 cup
Sugar as required and optional .

Method:

1.Heat a pan add a tbsp of oil.
2.Add onion,green chillies and saute well till the onions are translucent.
Then add  cashews,turmeric pd ,salt and cook till onions are fully cooked.
3.Then add tomatoes and saute them well.
4.Now add  coriander pd,chilly pd and  saute them well.Add water if necessary to help cook the spices.
5.Now add water and let it cook for 5 min then add the peas and mix
6.Cook for 5min till the Peas is cooked. 
7.Now add  paneer cubes and mix it.
Don't overcook as the paneer will becomes dense and hard.
9.If using cream then add it now and switch off the flame.
9.Garnish with coriander leaves.

Serve  with rotis, parathas, naan or rice.

Tips:

1)In video i added paneer first because i fried my panner too much so it looks dry ,so to make it soft i added it first to add extra cooking time for it to get soft by soaking, but i advice u to add peas first cook then add paneer at end and mix it,because paneer will become hard if u over cook it.

2)You can also add Shah Jeera/Black cumin during tempering.
Also can add dry Kasoori Methi leaves crushed along with spices.

3)If you are using dry peas,soak them in water overnight and cook for 4 whistles in pressure cooker and then use them .
