Ingredients:

Rice Cooked - 2 cups
Coriander LEaves - 1/2 cup
Coconut Shreaded- 1/4 cup
Shallots / Pearl Onion - 3 nos
Green Chillies- 7
Ginger and Garlic Paste - 1 tsp each
Onions Sliced - 1/2 cup
Cashews - 2 tbsp
Cinnamon - 1/2 inch stick
Cardamom - 2 pods
Cloves - 3
Bayleaf- 1 
Star Anise - 1
GaramMasala Pd - 1 tsp
Ghee - 3 tbsp

Method:

1.In a blender take green chilly,small pearl onion or Shallots ,coconut, coriander leaves and grind it to a fine paste by adding water.

2.In a pan add ghee ,then add cardamom,bayleaf,star Anise,cinnamon and cloves and saute a min.Then add onions ,curry leaf and few cashews and saute till onions are golden brown.

3.Then add ginger garlic paste and saute till raw smell goes away.Then add the ground coriander paste and saute again till the raw smell goes off and ghee starts to float on top.

4.Then add garam masala powder and mix well along with salt.Add few more cashews if you like at this stage ,I added here instead at the beginning to avoid over browning of cashews.
5.Once all the raw smell goes away now add cooked Basmathi rice little by little mixing them gently without mashing the rice too much.


6.Do a taste check and make adjustments as needed.
Serve it along with raitha.
