Kothukari Kuzhambu

Ingredients :

For Grinding Masala:

Coriander Seeds - 2 tbsp
Cumin Seeds - 1 tsp
Fennel Seeds - 1 tsp
Pepper - 1/2 tsp
Dry Red chillies  - 5
Cloves - 3
Cardamom  - 2
Cinnamon  - 1/4 inch small stick
Onion -  medium  sliced
Ginger Garlic Green chillies paste - 1 tsp each (or) Ginger - 1/2 inch,garlic - 4 pods,Green chillies - 2
Sesame or Gingerly Oil - 1 tsp

For gravy:

Sesame Oil - 1 tbsp
Shallots or red pearl onion cut in half - 1/2 cup
Garlic cloves - 10
Tomato - 1 medium
Ground meat - 1 lb ,I used turkey meat.
Curry leaf - 1 sprig
Mustard seeds - 1 tsp
Coriander leaves - 1/4 cup finely chopped. 
Coconut Milk - 1 cup


To make Masala :

1.Dry Roast all the whole spices till they release aroma and keep it aside.
2.With a tsp of oil roast onions ,ginger and garlic and keep it aside to cool.
3.Grind spices to a fine powder,then add sauteed onion, ginger,garlic,green chillies paste or whole and grind them along with spices to a fine paste using water.

To make Gravy:

1.In a pressure cooker add 1 tbsp of oil and roast onion,garlic and green chillies along with turmeric pd and salt.
3.Then add ground meat ,turmeric,salt and Saute it for few minutes, it will start releasing water.
3.Then add potato , tomato and needed water and let it come to boil.Then add ground paste along with coconut milk.

4.This is a thin gravy so add some extra water.
5.once it's boiling cover cooker and pressure cook for 5 whistles and switch off flame and let the steam release on its own.
6.Then open cooker and do a taste check and add salt if needed.
7.Add a squeeze of 1/2 Lemon for the flavors to blend in together.
8.Make a tadka with Oil, mustard seeds and curry leaf and pour on top of gravy and mix and give one boil and switch off flame. 
9.Garnish with coriander leaves and serve hot with rice,dosa or idly.
