Lemon Brown Rice
Lemon White Rice

Lemon Rice is one of the important variety rice in Indian Cooking.If it's a picnic or lunch boxes or party or functions this will be one of the dish.
Its quick,easy and tasty.I Sometimes try this with brown rice sometimes with white rice and both tastes equally good.
Adding nuts like cashews,peanuts,almonds,pista,walnuts will enhance the flavour of this dish.
Pulses like urad dal,channa dal is added for the same reason,its gives a crunchy bites in the middle and the flavor is enhanced much.These pulses and nuts are essential to make it a tasteful dish.Dont skip those if you want to indulge its fantastic taste.

Ingredients:


Cooked Brown or White Rice - 2 cups
Coconut Oil - 1 tsp
Mustard Seeds - 1 tsp
Urad Dhal - 1 tsp
Channa Dhal - 1 tsp
Dry Red Chillies - 2
Cashews or Peanuts - 1 tbsp
Curry Leaf - 1  sprig
Hing -  a pinch
Salt - as needed
Turmeric Pd - 1/2 tsp
Lemon - 1 

Method:

1.In a saute pan add oil,once its hot add mustards seeds once they splutter add urad dhal , channa Dhal,Peanuts and roast them till they turn golden brown.
If using cashew don't add it now add it later or it will burn faster.
2.Then add dry red chillies,curry leaf, hing,t urmeric pd and cashews(if using) and saute them a bit.Add salt and give a stir.
3.Then add cooked rice and give a gentle stir and once its mixed well switch off flame and remove from stove and let it cool sometimes.
4.Once its warm add lemon juice and mix well gently,If you add lemon juice when its hot the lemon juice may turn bitter so add it once the rice becomes warm enough.
5.Serve with Sambar and Papad,A good Potato stir fry or chips is also a good combo for this rice variety.
