Even though Okra comes with lot of nutritional values the slimy ness character makes it a stay- away-vegetable .So we tend to use lot of oil while cooking okra as a fry,well I tried this recipe with intention of using less oil and make it less slimy and it ended up in sucess.I sauteed Okra in dry pan till its most slimy ness is gone then added oil to help it fry more,One thing to notice is that when sautéing okra without oil it may have the tendency to stick to the pan so keep it in low flame and keep on stirring till the goal is reached.... Then voila...

Ingredients:
Okra - 2 cups sliced
Onion - 1 cup sliced thinly
Coconut oil - 1 tbsp
Chilly pd - 1 tsp
Turmeric pd - 1/2 tsp
Salt - as needed
Sambar pd - 1 tsp
Amchur Pd - 1/2 tsp
Method :
1.Take a wide pan so okra is not overlapped while cooking.
2.Add okra and turmeric pd then saute it in medium flame till its most of the slimy Ness is gone.
3.Now add oil one tsp at a time giving some gap to let the oil fry the okra.
4.Now add onion when 70% of slimy Ness is gone , then add Chilly pd, sambar pd, amchur pd and salt and saute it with one more tsp of oil till the spices are roasted.

5.Let the flame be medium while cooking, if you decide to keep in high flame give a constant look over the bindi as it may burn faster.
6 . Finally add one more tsp of oil and put in low flame and spread it in pan in one layer and let it sit giving mixing in between cooking process.
7.Once they look done and dry transfer to a serving bowl.
