Ingredients:

Pork - 1 lb cut into cubes
Onion - 1 medium sliced thinly
Tomato - 1 medium sliced thinly
Green Chilly - 2 slit or more to your spice level
Curry leaf - 1 sprig
Spinach - 2 cups
Coconut oil - 1 tsp

For Marinating pork:

Ginger Garlic paste - 1 tsp each
Chilly pd - 1 tsp
Salt - as needed
Vinegar - 2 tsp

To dry roast and grind:

Coconut flakes or shreaded fresh - 1/4 cup
Coriander seeds - 2 tsp
Cumin seeds - 1 tsp
Fennel. Seeds - 1 tsp
Peppercorn - 1 tsp 
Dry Red Chillies - 5 (mild),10 (medium spicy),20 (extra spicy)
Cinnamon - 1 stick
Cardamon - 3 
Cloves - 3
Star Anise - 1

Method:

1.Cut pork into pieces and add ginger garlic paste, turmeric, Chilly pd, vinegar and let it sit for 1 hr to marinate.
2.In a pressure cooker add oil then saute onions, green chillies, curry leaf.
3.once they are sautéed add marinated pork and give a stir to seal the outer side of pork.
3.Then add ground paste and add water to cover pork.
4.Then ads tomatoes and give a stir and add salt and then wait till it comes to boil and cover and pressure cook for 4 whistles.
5.Then let the pressure release on its own then open and keep in low flame once it's starts to boil add spinach and blanch it for 5 min and check for seasoning and add if any needed.
6.Serve hot with white rice.

Tips:Add coconut milk of the curry is too spicy to give a creamier taste.
