Ingredients :

Gram Flour or Chickpea Flour - 1/4 Cup
Sooji / Semolina - 1/4 cup
Salt - as needed
Baking soda - 1/2 tsp
Ajwain pd / Omam - 1 tsp
Red Chilly Paste / use flakes - 1-2 tsp
Buttermilk or use( milk + 1 tsp vinegar) - 1/2 cup
Coconut oil - for making dosa

Vegetables :

Carrots - 1/2 shredded
Beans - 5 sliced thinly
Apple - 1/4 shredded
Chaat Masala - 1/2 tsp to mix with vegetables

Tips:

Topping you can add any vegetables like finely chopped onion, tomatoes, green chillies, coriander leaves, cabbage etc
I coarsely grind carrot, beans, apple and I added in batter and mixed, if I keep as topping my kid will pick all and throw it away.
But you can add as topping which will be more crunchier and tastier.If your little one also do the same as mine mix it in batter like me.

Method:

1.Shred all vegetables and keep ready mixed with Chaat masala.I ground them and mixed with Chaat masala.

2.Mix Gram Flour, sooji, salt, baking soda and keep ready.

3.Mix milk with vinegar or keep your sour buttermilk ready. 

4.Heat the tawa.
5.Mix the milk mixture or buttermilk to the flour mixture and if you are mixing vegetables add and mix well, you can see bubbles forming, this is because of baking soda reacting with vinegar.

6.Then finally add Ajwain and Chilly Paste and mix well .

7.It should be semi thick batter which should be in dosa making consistency.
8.Pour it in not so hot tawa, if tawa is too hot you can't easily make dosa, so tawa should be in medium heat or cool it off by sprinkling water and clean the tawa and spray oil and make dosa slowly.

9.Keep flame in very low and cook dosa slowly for a uniform golden color.
10.If you didn't mix vegetable to batter , now add the topping on top of dosa and press it firmly so veggies get stick to dosa and add some oil on top and cook in low flame for uniform cooking.
11.Just check underneath if it's golden carefully flip dosa ,and cook other side.


12.Once other side is done too, flip once again and wait for other side to get little crisp if needed, at this stage if you want to add cheese on top you can add it now and wait 1 min for cheese to melt and serve hot.
13.If your dosa is spicy have it with dates syrup or honey or sugar. If not spicy have it with ginger dates chutney.
