This is one of the recipe which can be had as a substitute as vegetarian instead of having fish curry.When you don't have fish you can make this with veggies like tomato,drumstick,mango ;this recipe is same as fish aviyal but only vegetarian.

Ingredients:

Tomato - 1 cup
DrumStick - 1 cup
Salt 
Turmeric Pd - 1/4 tsp
Tamarind Paste - 1/2 tsp
Curry Leaf - 2 sprig
Green Chilly Slit - 2 

For Grinding:

Coconut - 3/4 cup
Coriander Pd - 2 1/2 tsp
Chily Pd - 3 tsp
Pepper Pd - 1 tsp
Curry Leaf - 1 sprig
Small Onion / Pearl Onion - 2 
Turmeric Pd - 1/2 tsp

Grind all these to a smooth (butter like) Paste.


Method:

1.In a pan add drumstick and add salt and turmeric pd and let it cook.

 2.When drumstick is cooked add Tomato,green chilly and let it cook half way through.
 3.Add the ground paste ,tamarind paste ,curry leaf and let it come to boil.Check Taste and add salt as needed.


 Hot Tomato Aviyal is ready to serve with hot rice.
