Pazham Pori / Batter Fried Plantains
This is one of the famous recipe from kerela.As we all know kerela has abundant growth of nendhiram Pazham / Plantain this is most common snack which is available everywhere in kerela.And as a child i had these snacks whenever i go to my hometown trivandrum for holidays my grandma used to get it from teastalls on the roadside shops.And at home also we make this as this is a favourite snack of everyone.This recipe taste only good with plantain(Nendhiram / Yetham Pazham) which can hold its shape after frying where as other bananas may collapse during frying process and will absorb lot of oil too.So try this recipe with ripe plantains.

Ingredients:
Plantain Ripe - 1 big
All Purpose Flour - 1/2 cup(If you are health conscious use wheat flour)
Yellow Color / Turmeric Powder - 1/4 tsp ( optional)
Salt - a pinch
Sugar - 1 tbsp
Baking Soda (optional) - 1/4 tsp,to get a crispy outer coating,If you like soft leaving baking soda,I prefer without baking soda.
Water - to make batter
Oil - for frying
Method:
1.Cut plantain into slices like shown below
2.In a wide bowl mix all other ingredients and make a batter of thick yet coating consistency.MAke sure batter is thick other wise it will run in oil.And Don't make it too thick so you can't coat plantains.
3.Heat oil in a pan to medium to high heat,when oil is hot enough you can test it with one plantain dipped in batter ,it should immediately get fried rather than sitting in oil slowly frying and absorbing oil and check taste and make any adjust to the batter if you want to.
4.Pazham Pori is ready to serve.
