Ingredients:


1 Can ChickPeas / Garbonzo
1/3 cup Black Rice 
2 cups mixed frozen vegetables
1/2 cup diced Onion
1/2 cup frozen Peas
Pinch of Turmeric
1/3 cup canned Coconut Milk 
Salt - To taste

Garam Masala:


Olive Oil + Ghee- 1 tsp + 1 tsp
Bay Leaf - 1
Cardamom - 1
Cinnamon Stick - 1
Cloves - 2
Fennel Seeds - 1 teaspoon
Curry Leaves - few
Green Chillies - 2

I used Black Rice for this recipe ,but you can use regular rice

Method:

  1. Soak the Chickpeas overnight and pressure cook it till it is soft allowing it for 3 whistles. I used canned chick  peas. Wash and Soak the black rice in water for 20 minutes. 
  2. Heat a pan and add ghee and oil and add the Garam Masala ingredients and fry for a minute. Then add Chopped onions and green chillies along with a pinch of salt and turmeric pd and saute them till they become transparent. 



3.Meanwhile, drain the water from the soaked rice and keep it ready. Then add frozen veg .peas and chick peas and toss them and stir fry them in medium flame for 5 minutes. Now we need to add the kuzhambu powder and fry them for a minute






4.Now we need to cook them all by adding coconut milk+water. The ratio of rice and water is 1:2. For 1/3 Cups of rice, I have used 1/3 Cups of coconut milk and 1/3 cups of water. Addition of Coconut milk is optional. I personally like the flavor of rice cooked with coconut milk. But if you don't want you can add just 2/3 cups of plain water. Keep the flame high and cook the rice and vegetables.we can add salt and mix once . When it starts to boil cover and put flame in low as possible and let it sit for 20 min.If you have electric cooker at this stage transfer to electric cooker and add extra 1/4 cup water if using black rice and cover and cook.


5.Once your cooker stops cooking,unplug the cooker and after 5 min open and squeeze one lime / lemon juice and give a gentle stir and The yummy and fluffy Chickpeas Masala Rice is now ready to serve with Raitha .Same applies to stove top also open pan after 20 to 25 min,then add lemon juice and give a gentle stir
