Spicy Egg Curry

Goes well with sweet Aapam


Hard Boiled Eggs - 4
Onion - 1 medium size chopped
Ginger Garlic PAste - 1 tsp each
Tomatoes -2 small chopped
Turmeric Pd - 1/4 tsp
Coriander powder - 1 tsp
Roasted Cumin Pd - 1/2 tsp
Garam Masala- 1 tsp
Chilly Powder - 1 tsp
Egg Curry Masala Powder  - 1 /2 tsp (optional)
Mustard Seeds -1  tsp
Green Chillies - 4 slit
Curry leaf - 1 sprig
Coriander leaf - for  garnishing


Heat a Pan Once its hot add onions,turmeric saute them well...once its translucent add gingergarlic paste and stir well until its raw smell is gone...then tomatoes and saute till its cooked completely...then add all other powder and stir by adding little water and help the masalas to cook completely....then switch off flame and blend this to a fine puree....

Take a pan add oil ,then add mustard seeds ,curry leaf and green chillies...once greenchillies are become translucent add the puree and add eggs to it...garnish with coriander leaf....serve hot along with aapam.....
