Apple Cake With Almond Topping

Apple Cake 

Prep time: 10 mins
Cook time: 1 hrs 15 mins


Unsalted butter - 1 cup of  softened at room temperature
Sugar - 1 cup
Eggs - 4
Vanilla Extract - 2 tsp
Baking Powder - 2 tsp of
Lemon Zest -  From 1 Lemon
Flour - 3 cups
Apples, peeled cored and cut into bite size pieces - 4
Milk - ¾ cup
almond for topping - 1/2 cup


1) Preheat the oven to 350 degrees. Grease a Spring foam pan/Bundt Pan with oil and dust it with flour around the surface well and set aside.

2)Mix almonds with a tbsp of flour


Mixing Wet Ingredients:

1) In a large bowl, cream together the butter and sugar, add the lemon zest, eggs and salt and mix to combine.

2) Add the milk and whisk it all together so you have a smooth mixture.

Mixing Dry Ingredients:

1) In a bowl ,Add the flour along with the baking powder and vanilla powder (or extract) and mix it together / sieve it (optional) enough to combine the dry ingredients.

Mixing Wet and Dry Ingredients:

1)Now add the dry ingredients to the wet one and just mix very gently ,don't overmix  (If you overmix it will make batter dense leading to a bread not cake).

2)Sprinkle the apples with a about 3 tbsp of flour and toss them to coat.

3)Add the apples to the batter and fold them in. Don't overmix.

4) Pour the batter in the prepared pan and and top it on the top with floured almonds and bake it for about one hour to one hour fifteen minutes or until fully cooked through. (When u insert a skeewer it should out very dry,not batter sticking to it)

5) Allow it to cool completely, invert onto a platter and dust generously with confectioner sugar.
