Veg Kuruma (not Korma)

Ingredients:


To boil Soya:


Soy Nuggets - 1 1/2 cup raw
Water - 3 cups
Salt - 1 tbsp

Boil soya with listed ingredients and once its soft and doubled in size , filter ,cut them to bite size pieces and keep aside.

For Gravy :


Oil - 1 tbsp
Mustard Seeds - 2 tsp
Onion - 1 small size ,sliced
Green Chillies -2
Tomato - 1 ,diced
Ginger Garlic Paste - 1 tsp
Curry LEaf - 1 sprig
Carrot - 2, med size
Potato - 1 ,big size
Baby Corn - 6 no
Garbanzo beans - 2 cans , 28 oz
coriander Leaf - To garnish

To Grind:

Coconut - 4 tbsp
Cloves - 4
Cardamom - 3
Cashew - 1 tbsp
Poppy seeds - 1 tsp
Cinnamon stick - 1/2 stick

Method:


  1. Heat a pan ,add oil.
  2. Then add mustard seeds.Once they splutter add onions and green chillies.Saute it.
  3. Once they are translucent add tomato.Saute it very well.
  4. Then add Ginger Garlic Paste and curry leaf.Saute them very well.
  5. Then add diced carrot,potato saute them very well.Add 1/4 cup of water to help to cook the vegetable.Once they are half cooked.
  6. Then add baby corn , Garbanzo beans and 1 cup water and cook till it boils.
  7. Then add ground masala.
  8. Then add boiled soya granules and mix them and add water till all is immersed in water and and cook ,till are veggies are cooked thoroughly.
  9. Do a taste check and add salt as needed.
  10. Cover and let it cook in low flame for 20 min,
  11. Garnish with coriander leaf.
  12. Serve with chapathi.


Tips :


You can add as many veggies you want .
Suggested Veggies - cauliflower , beans , butter beans , beet root.
