Sheer Chai (Salty Pink Tea - Kashmiri Recipe)

Salty pinkinsh colored cream tea.This is always served when special guests come.It is believed that the more you like the person or the more the importance of the person,more is the amount of malai in the tea.
Kashmiri Green Tea Leaves -1/2 tsp
Baking Soda - 3 pinches
Salt - 1/4 tsp
Milk - 1 cup
Cold water - 1 cup
Malai / Fresh Cream - 2 tsp
Crush together almonds and green cardamom - 2 tbsp
Sugar (optional)
If you prefer u can add sugar.(optional)

About Sheer Chai:
Noon Chai (also called Kashmiri tea, Pink tea,[1] and Sheer Chai) is a traditional tea beverage from Kashmir. The name "Noon" comes from a local word for salt.
Noon chai is made from special tea leaves, milk, salt, pistachios, almonds, and cardamom.Cinnamon is sometimes also added for flavor. A pinch of baking soda is added to help give it more of a pronounced pink color. It is consumed in many parts of Pakistan at special occasions, weddings, and during the winter months when it is sold at many kiosks.
Ingredients:
Water - 3/4 cupKashmiri Green Tea Leaves -1/2 tsp
Baking Soda - 3 pinches
Salt - 1/4 tsp
Milk - 1 cup
Cold water - 1 cup
Malai / Fresh Cream - 2 tsp
Crush together almonds and green cardamom - 2 tbsp
Sugar (optional)
Method:
- Take a pan and add 3/4 cup water,tea leaves, baking soda,salt and let it boil till water evaporates to 1/4 cup ,the color should be now maroon in color.
- Then add cold water and milk and let it comes to one to three boil then switch off the flame .
- Then mix it vigorously with two cups so it forms foam.
- Then pour it in serving cups and garnish cream and with crushed almonds and cardamom mix and serve hot...
