About Olan:


Olan (pronounced [oːlan]) is a dish that is part of the Kerala cuisine of South India. It is prepared from white gourdcoconut milk andginger seasoned with coconut oil.
Olan is usually served as part of a Sadhya.

Ingredients
Preparation
  • Soak the beans overnight.
  • Pressure cook the next day until 3/4 done.
  • Add chopped pumpkin, salt and slit green chillies.
  • Cook with a little water.
  • When the pumpkin and the beans are completely cooked, pour hot oil tempered with curry leaves into it.
  • Add the coconut milk and simmer for 3–4 minutes.

My Style:

Ingredients:

Black-eyed beans  – 1 can ,14 oz
pumpkin– 2 cups, cut into cubes
Green chilli – 3, slit lengthwise
Water – 1 cup
Thick coconut milk – 1 can,14 oz
Salt
Curry leaves
Coconut oil(optional)


Method:


Pressure cook the beans if using dry one, with 1.5 cups water .
Strain the stock and keep aside the cooked beans. The beans should not be over cooked and it should retain its shape.
Cook together pumpkin, green chilli, salt and 1 cup water, till Pumpkin becomes tender. Again, Pumpkin also should not be overcooked and it should retain its shape.
Add the cooked beans to the pumpkin and mix well.
Add coconut milk and curry leaves. Cook on low flame for 5-7 mins.
Remove from the fire and drizzle some coconut oil.
The curry should have a thick consistency.
