One of the easiest recipe to make if all ingredients are available,Just unfreeze Fish while you chop vegetables and make spice mix.Then grill defrosted Fish and tortillas and mix Fish with spice mix when its hot and serve tortillas with sour cream.
Sit in table with grilled tortillas in a plate, grilled Fish with spice mix in a bowl , chopped vegetables in another bowl and sour cream with a spoon.
Switch on your favourite show and layer your tortillas as you wish and sprinkle some more spice mix and lime juice on top and have a bite relaxedly,hmmm....mmmmhhh.....hopefully your kids are not shouting and getting your attention at this time.In that case just stuff everything in your mouth and go and watch over your kids.
Mostly the latter happens to me all time,assuming its the same for everyone too.So yay motherhood.

Ingredients:

Corn tortillas - 4
Fish Fillet - 4 ( I prefer flounder thin fillets)
Tomato - 1 medium sliced
Capsicum or Green Bell Pepper - 1 cup sliced
Onion - 1/4 cup Sliced
Cucumber - 1/4 cup sliced
Coriander LEaves finely Chopped -1/4  cup
Low Fat Sour  Cream - as needed
Oil - To use on Grill

Spice Mix:

Onion Powder - 1 tsp
Garlic Powder - 1 tsp
Cayenne / Paprika - 1/2 tsp
Roasted Cumin Powder - 1 tsp
Lemon Pepper Seasoning(optional ) - 1 tsp
SAlt - as needed

Method:

1.Preheat a pan and let it get smoking hot,spray oil and add fish fillet in single layer.Sprinkle soem spice mix if you desire but i like to sprinkle at the end.Adding spice mix will result in smoking the spice which some may like but i like to add it at end when it doesn't smoke much.Grill on both side and then keep it aside in a bowl and sprinkle some spice mix when its hot and give a gentle mix and let it sit for sometime for the flavours to infuse till you prep up all other things.
2.Slice and keep the veggies ready, i used tomato,onions,cucumber,coriander leaves but you can go wild on your preference.
3.Grill the corn tortilla and keep them on top of the fish ,this will keep the fish also moist and not get too dry.
4.Now layer it up and eat,i always smear a layer of sour cream on tortilla and then layer it with fish and veggies and sprinkle with spice mix if desired and serve it.
