Cabbage Onion Vada
We always make onion vada never tried cabbage vada this is the first time.Our fridge was stocked with a big cabbage and its time to put it to use.Tired of all cabbage recipes so i went into thinking of what can i make something new with cabbage so i thought why not make vadas with it,so here you go.
One problem in making cabbage vada is that the cabbage itself will release lot of water once you add salt and spices to the batter,so we have to keep on check with the batter consistency as it will continuously release water and the batter may become thin and will absorb oil while frying.To prevent that check batter every time you fry and if its little watery add extra flour in little till the batter is thick again,and also add salt if needed.So try this make this vada as fast as you made the batter or mix entire batter without adding cabbage and keep ready and once you are ready to fry add cabbage and mix and fry them before they start to release water.
Ingredients:
Sliced Onion - 1 medium
Cabbage Shreaded - 1 small
Chilly Pd - 1 to 2 tsp
Fennel Seeds - 2 tsp
Ajwain Pd - 1 tsp
Salt - as needed
Coriander LEaves - 1/4 cup chopped
Gram Flour - 1 cup
Rice Flour - 3 tbsp
Cabbage and onion will shed water ,so increase or decrease flour as needed.Rice Flour is to give crispiness to vada.So if you want more crispy vada add more rice flour.Make sure the vada mixture is not wet or it will absorb oil,So if it absorbs too much oil add some more flour to the mixture and always keep flame in medium to low for the inner part of the vada to cook uniformly without burning outer side.
Never add single drop of water to the batter as the veggies will release water.
Method:
1.Slice onion,cabbage and coriander leaves and mix them all along with all spices and ad flour little by little and make a dough.The dough should not be too wet then it will absorb oil while frying.Using plastic gloves or spoon to mix or your hand may be burning for 2 days because of chilli powder.
2.Heat oil to medium hot and add one dollops of batter and check taste and how its coming.If it works good ,then add rest of batter as dollops and make vadas.Always keep flame medium low for good well cooked vada.Cook till golden brown and then Drain them.
Serve hot With Chutney.
