Black Bean Noodle In Thai Green Curry Sauce ( Gluten Free)
Ingredients:
Black Bean Noodle - 8 oz
Shrimp - 8 to 10 nos
Bell Peppers yellow and Red - 1 cup sliced
Cauliflower - 1 cup florets
Thai Green Curry Sauce - 2 tbsp
Coconut Milk - 4 tbsp
Parsley and mint - for garnishing
Red Pepper flakes - optional for spiciness
Coconut oil - Around 1 to 2 tsp
Garlic cloves - 1 sliced,i used garlic shoots here.
Method:
***Boil Black Bean Noodle as per the package instruction and keep it ready.
1.Take a pan and heat it,add coconut oil and let it get hot ,then add shrimps and let it sit for few minutes until it get seared on one side and then flip it to get sear on other side.Finally add garlic cloves and give it a stir .
Add shrimp once the pan is extremely hot or you won't get sear properly.
2.Remove shrimp and place it in a bowl and then grill peppers and cauliflower and keep the ma long with the shrimp.
3.Then add little extra oil and saute the green curry paste until the raw smell is gone,Add little water if the spices are getting stick to the pan.
4.Once the raw smell is gone add coconut milk and stir it well.
5.Now add back the veggies and shrimp and let it come to boil for the flavours to infuse.
6.Finally add black bean noodles and mix well and garnish with parsley and mint leaves and serve hot.
