Quinoa With Bagara Baingan

I know I make lot of quinoa recipes at home. When ever i think of making variety rice or puloa or fried rice I go along with quinoa instead of rice. I prefer quinoa taste more than rice in these kind of recipes.But you can try this same recipe with rice too.I have added sausage to this recipe but if you like it to be vegetarian leave out sausage and try this.

I made this recipe to have it with bagara baingan recipe i made today instead of briyani, as this took only 15 min to make, you can also try the same if you are interested. So enjoy the healthy protein packed  quinoa in this way....

Ingredients :

Quinoa - 1 cup raw
Mixed frozen vegetable - 1 cup
Italian Sausage - 3 links(remove outer casing )
Spinach - 1 cup chopped
Garam masala - 1 tsp (optional)
Coconut oil - 1 tsp
Salt - as needed

Whole spices:

Cinnamon - 1 stick
Cardamon - 2 pod
Cloves - 3
Bay leaf - 1
Star anise - 1
Cumin seeds - 1 tsp
Whole pepper - 1/2 tsp

Method :

1.Take a pan and add oil and then add whole spices and saute it a
min.
2.Add spinach and sausage and break the sausage into tiny pieces while sauteeing.

3.Once all pink color is gone, add 1 cup of water and cook covered for 5 min.Check to see if water is there or its getting dry.
4.Remove cover saute till all water evaporates. Add garam masala and give it a mix.
5.In the mean while cook quinoa and vegetables with 1 1/2 cup water and keep them fluffy and ready.

6.Add this quinoa to sausage mixture and check for salt and add as needed.

7.Serve hot with raita and gravy.

Tips:

You can make this complete vegetarian too without adding sausages.In that case saute some onions along with Spinach before adding quinoa.
