Ingredients and Method:

For vegetables:

Use whatever vegetables you have
I used
Potatoes - 5 medium boiled and peeled and mash them with hand don't use blender or mixer for potatoes, keep it a little chunky.
Boiled carrot - 1 cup
Blanched Spinach , brocolli - 2 cups
Mushroom boiled - 2 cups
Peas and carrots - 1 cup each boiled and drained completely
Spinach, brocolli, mushrooms can be sautéed along with onion to remove excess moisture.
Paneer (optional ) - as needed
Frozen Baby Lima Beans - 4 cup boiled to softness
Coriander leaves and mint leaves - chopped finely 3 tbsp each
Use frozen vegetables if you prefer.
Make sure after you boil or steam vegetables drain out as much moisture as possible and keep all vegetables very dry.
Then Chop all vegetables in food processor to fine pieces except potatoes.

For Masala:

Coconut oil - 1/2 tsp
Whole spices - cinnamon, cardamom cloves 1 each
Ground garam masala - 2 tsp
Coriander pd - 1 tsp
Cumin pd - 1 tsp
Chilly pd - 1/2 tsp
Onion sliced - 1 cup loosely packed
Bell peppers (optional) - 1/2 cup chopped
Salt as needed
Ginger and garlic paste - 1 tsp each
Use whatever spices you prefer.

Take Oil In a pan and add whole spices, onion, pepper and saute them.Then add ginger garlic paste and stir until raw smell goes away,then add all powdered spices and cook for few minutes. At the end add spinach/brocolli/mushroom whichever you are using and saute them till all the moisture is gone and its dry.

To make patty:

Whole wheat bread - 6 to 7 slices as needed,
Chop bread in food processor to fine pieces and add them while mixing vegetables according to moisture content.
Bread helps to absorb moisture and help you form patties easily.
Add all vegetables in food processor along with masala we made and chop them using pulse mode and mix them all with mashed potatoes and add bread pieces according as needed.

Adding Shreaded Paneer / Cottage Cheese

Option For Bread Crumps:


Instead of Breadcrumps you can also add toasted oats blended into coarse crumbs to the vegetable mixture


For coating:(optional)

You Can Add Coating Only If needed, Not compulsorily Necessary.
1 tbsp of Cornstarch mixed with tbsp water / Egg whites / Egg - for wet coating
Whole egg can be mixed with tablespoon of water to thin it out to coat the patty and then if you dip your patty in breadcrumps it will stick better
Panko breadcrumps mixed with Parmesan cheese - for dry coating , this will give crisp outer surface to your patties.
Make round or oval patties in the vegetable mixture and you can fry them without any coating in tawa by spraying some oil .
If using coating you can directly dip the patty in breadcrumps for light coating and fry them by spraying oil.
Or you can dip first in wet coating and then in dry coating for covered coating and fry them in griddle.
You can also roast them in broiler oven on low setting for 2 min each side.Spray oil on each side.


To bake in oven like Quiche,Just mix egg whites or whole egg if you prefer with vegetable mixture and put a scoop of this mixture in the muffin tin and bake it in preheated oven for 375 degree for 20 min or a toothpick inserted into the baked mixture comes out clean with no batter sticking.

You can use this method to make bulk of patties and you can store this in freezer and use whenever needed.Just thaw them and heat it up in microwave or griddle.For Golden Crust you can put this in the griddle with light coating of oil and crisp them on both sides.

Note:

Obviously you can deep fry the patties if you prefer.
Keep them warm in oven in 170 degree preheated oven in single layer in baking tray loosely covered with aluminum foil till they can be served.
