Vegetable Cheese Soup


I made this soup in the intention of feeding some vegetable into my babies diet.He hates if i make them into puree simply by blanching them and grinding them in mixer,but when we go to restaurants he loved the broccoli cheddar soup,So i tried my own version of mixed vegetable soup and he loved it.So no more worries if your baby is not a great lover of veggies,try this recipe he wont know its veggies but will love it because of yummy taste from cheese.Not only kids adults too love it.When you are planning to make it for kids,try to avoid pepper or use very little ,or they may not like it because its spicy.
This soup can be modified with everyone's own preferences of veggies and cheese.
I used Broccoli , Cauliflower, carrot , Potato but you can also use Peas , edamame too.
For Cheese i used Provolone , but you can also use mild or sharp cheddar , mozzarella , colby cheese or your own preference. 


Ingredients:

Mix vegetable - Broccoli , Cauliflower , Carrot , Green Peas , Edamame - 1 cup(Fresh or Frozen)
Potato - 1 
Cheese - 5 to 6 slices or 1/2 cup shredded.
Milk - 1/2 cup
Butter - 1 tbsp
Flour - 1 tbsp
Chicken Bullion Powder - 1 tsp (or Chicken Stock - 1 cup)
Italian Herbs - 1/2 tsp
Salt - as needed
White Pepper - 1/2 tsp (If you don't have white pepper use black pepper)


Method:

1.Boil water with a teaspoon of salt.In the mean time Peel and cut potatoes into dices and place in a microwavable plate and microwave for 3min,so its almost tender.Once water is boiling add vegetables and cooked potatoes and blanch them till all veggies are cooked well.Filter it and keep it aside for 5 min,then grind the veggies o a fine puree in a blender.





 2.In a pan add butter ,once it melts add flour and stir well in medium flame for 2 min ,be careful not to burn the flour(this flour is to give thickness to soup,and roast flour well or it will give raw taste).



 3.Then add chicken bullion powder or chicken broth (what ever you are using).If using bullion pd add 1/2 cup of water.Then add milk and stir well with whisk and no lumps should be there.



 5.Then add pepper pd and let it come to boil.



 6.Then add the veggie puree to this and whisk well.Let it come to boil,then add cheese finally and let ti melt and mix completely.Now do a taste check and add salt.(Veggies are cooked in salt water and cheese has salt and chicken bullion pd has salt too so be careful in adding salt) .Finally add italian seasoning and give a good stir and switch off flame.




 7.Serve it hot in a soup bowl.
