Kanava Roast / Calamari Roast / CuttleFish Roast




Ingredients:

Cuttle Fish cleaned - 1 lb
Onion - 1 small sliced
Curryleaf - 1 sprig
Green Chillies - 3 slit
Chilly Pd - 1 tbsp
Coriander pd - 1 tsp
Salt
Garam Masala - 1 tsp
Turmeric Pd - 1 tsp
Oil - 3 tbsp

Method:

1.Heat a pan and once its hot add oil then the onions ,turmeric pd and curry leaf and saute till onions are roasted .
2.Then add chilly pd ,coriander pd. garam masala,salt and saute it till its cooked completely.
3.Add water if necessary.
4.Now add the fish and saute them add 1/2 cup water and cover and let it cook.
5.Once its cooked completely ,open lid and increase heat and saute let it become dry and add extra oil if necessary to make it like a roast.
6.Serve hot ...


Tips:


1)To Clean any fish ,When you are washing and cleaning them clean it with vinegar then wash it with water for the vinegar smell to go away.Vinegar will get rid of any fishy smell if present .
Usually fish like cuttle fish and squid has lot of fishy smell,this technique will help in that case.

2)The main technique to follow in all dry roasting is add water first ,and do the cooking process,finally dry it to make roast.Adding oil at end will make it crispy.

3)Add coconut oil in fish recipe like this and  2 to 3 whole sprigs curry leaf ,it gives a good flavour to the entire recipe
