Guacamole , is an avocado-based sauce that originated with the Aztecs in Mexico. In addition to its use in modern Mexican cuisine it has also become part of American cuisine as a dip, condiment and salad ingredient. It is traditionally made by mashing ripe avocados with a molcajete (mortar and pestle) with sea salt. Some recipes call for tomatooniongarlic, lemon juice, chili, yogurt and/or additional seasonings.

Serves 4-6

2 Avocados
5 Thin Scallions, trimmed and finely chopped
Juice of One Lime
3 Tbsp of Finely chopped Cilantro
1 Jalapeno, seeded and finely minced
Salt and Pepper, to taste.

1) Cut the avocados in half and remove the stone, scoop the flesh into a bowl and using a fork, mash it to your desired consistency (prefer mine a big on the chunky side)

2) Add remaining ingredient and mix well. Serve with Tortilla chips and Enjoy!
