Sun-dried tomatoes are ripe tomatoes that lose most of their water content after spending a majority of their drying time in the sun. These tomatoes are usually pre-treated with sulfur dioxide or salt before being placed in the sun in order to improve quality.[1] Typically, tomatoes spend 4-10 days in the sun in order for the sun-drying process to be complete. [2] Cherry types of tomatoes will lose 88 % of their initial (fresh) weight, while larger tomatoes can lose up to 93% during the process. As a result, it takes anywhere from 8 to 14 kilos of fresh tomatoes to make a single kilo of sun-dried tomatoes.
After the procedure, the tomato fruits will keep their nutritional value. The tomatoes are high in lycopeneantioxidants, and vitamin C,fat, and calories. The final products may contain up to 2-6% of salt and could provide a significant contribution to the day's intake. Sun-dried tomatoes can be used in a wide variety of recipes and come in a variety of shapes, colors, and tomatoes. [3] Traditionally, they were made from dried red plum tomatoes, but they can be purchased in yellow varieties. Sun-dried tomatoes are also available in the form pastes or purées.
Sun-dried tomatoes may also be preserved in olive oil, along with other ingredients such as rosemary, basil, dried paprika, and garlic.

Ingredients:

1 8oz Jar of Sun Dried Tomatoes, packed in olive oil
3 sausages casing removed
2 Cloves of Garlic
1 cup of Fresh Basil
1 Tbsp of Balsamic Vinegar
2 Tbsp of Toasted pine Nuts
About 1 cup of Parmiggiano Regginao(Parmesan cheese)
Salt and Pepper to taste
1 pound of Bow Tie Pasta

Method:


For the Pesto:


1) Place the sun dried tomatoes with the oil in a food processor along with the garlic, pine nuts, balsamic vinegar, basil and salt and pepper. Blend until you have a nice paste and place in a bowl.

2) Stir in the cheese and you are done!

For sausage:


Take a pan add oil then add sausage and break them and cook them thoroughly...Keep aside..

For the Rest of the recipe:


3) Fill a large pot with water and sprinkle in a good amount of salt, bring to a boil.

4) Add your bow ties and cook according to package directions.

5) Right before you are ready to drain, reserve about ¾ cup of the starchy cooking water.

6) Place the drained pasta along with the starchy cooking water back in the same pot and add in the sun dried tomato pesto then the sausages.

7) Stir everything together and adjust the salt and pepper seasoning according to taste. Serve immediately or store in the fridge to be eaten at any time.
