Punjabi Samosa

With Soya,Potato,Peas Stuffing


For Stuffing:

1 cup Boiled Soya(1/2 cup raw soya)
1/2 cup fine diced onion
2 medium size boiled potatoes
1/2 cup frozen peas
1 tbsp  chilly pd
1 tsp salt
1/4 tsp garam masala
2 tsp amchur pd / dry mango pd
1 tsp lemon juice
2 tsp oil
coriander leaves - 1/4 cup

1 tbsp - crushed coriander seeds
1 tbsp anardana seeds / dry pomegranate seeds

For Covering:

2 1/2 cup flour
5 tbsp ghee melted
1/2 tsp baking soda
1 1/2 salt
1 tsp shah jeera
1 tsp  carom seeds(ajwain)
10 tbsp water

oil for frying


For stuffing:

Take a pan , once its hot add oil and onions and saute well then add all other spices ,saute a minute then add soya,crushed potato and peas and mix well ...once the are cooked well add coriander leaves...Finally add lemon juice and mix it...keep it aside

For Covering:

Mix all ingredients and make a stiff dough...keep it for 30 min covered with wet cloth so the surface doesn't get dry...
then make an oblong shape with a roundel like poori by using oil for easy spreading ...try to make a big oblong so u can make big samosas, then cut it in half and bush the straight edge with water and seal them together forming cone shape ,then fill the stuffing inside cone very tightly,then seal the other edges tightly....


Then fry it in oil in medium flame ,so inside also gets cook uniformly....
