Mashed Potato Fry


Potatoes - 6 no
Salt - 1 tsp
Sambar Powder - 2 tbsp 
Oil - 4 tbsp
Mustard Seeds - 1 tsp
Curry Leaf - 1 sprig

If you dont have sambar powder  use,
Chilly Pd - 2 tsp
Coriander Pd  - 2 tsp
Cumin Pd - 1/2 tsp
Pepper Pd - 1/4 tsp
Turmeric Pd - 1/4 tsp
Hing / Asafoetida Pd  - 1/4 tsp


Pressure cook potatoes with salt for 5 to 6 whistles.Open when the pressure is released on its own.
Mash the potatoes with fork or potato masher.
Add Sambar Powder and keep stirring.
Add oil and mix it well.
Take a pan add oil and let it get hot.Add mustard seeds and curry leaf,Once mustard seeds splutter add mashed potatoes and keep stirring until potatoes gets incorporated with masalas and the masala is fried properly.Add extra oil for crispiness.
serve it with curd rice.
