Kitchdi

North Indian version of venpongal with little turmeric pd,green chillies and tomato...really tasty one






About Kitchdi

Khichṛi (Hindustani pronunciation: [ˈkʰɪtʃɽi]), alternate spellings khichdikhichrikhichdeekhichadikhichurikhichari, "kitcheree", "kitchree", and many other variants, (Hindiखिचड़ी khicṛī,[1] Urduکھچڑی‎ khicṛīOriya khecheṛiBengali khichuṛi,Gujarati: ખીચડી khichḍiNepaliखिचड़ी khicṛī,) is a South Asian preparation made from rice and lentils (dal). Khichri is commonly considered to be a comfort food, and was the inspiration for the Anglo-Indian dish kedgeree. Khichri is also thought to be the inspiration for the popular Egyptian dish, Kushari. Khichdi has no relation with the Keralite dish kichadi.


Ingredients:


  • Split green gram skinless ,soaked (20 min) - 1cup
  • Basmati rice,soaked (20 min)- 2 cups
  • Clarified butter/Ghee - 2 tbsp
  • Cumin seeds-1 tsp
  • DryRedChilly - 2no
  • Curry leaves - 1 Sprig
  • Tomatoes - 2 to 3 medium chopped
  • Ginger,finely chopped - 1 tbsp
  • Green chillies,chopped - 4
  • Turmeric powder - 1 tsp
  • Red chilly powder - 1 tsp
  • Salt- to taste
  • Bay leaves - 3
  • Coriander leaves - for garnishing







Method:

1.Wash Rice and lentil thoroughly in water 4 to 5 times and then soak them in water  Rice and Lentils for 20 min .


After 20 min rinse off the water .


2.Place rice and dhal in a pan and add 4 to 5 cups of water,ginger,curry leaf,turmeric pd....and cook till rice is tender and well done.




3.If water is not enough you can add extra water it should be in the below shown consistency 




4 Once the rice is getting almost done ,Heat ghee in another pan .


5.To check if the ghee is hot or not add few cumin seeds ,if it starts to splutter then ghee is hot.
6.Add the remaining cumin seeds,once they turn light brown and gives fragrant add remaining ingredients.




6.Now add Dry Red chilly , curry leaves ,Bay leaf and Tomatoes ,Turmeric ,chilly pd and salt saute till fragrant and well cooked....

7.Add a little water if you feel the masala is getting dry and keep aside.







8.Now Check the rice if its sticking at bottom add 2 tbsp of ghee and stir well to make its velvetty.


9.Stir it very well so u dont see full rice anymore ,it should be all mushed up.


10.Then finally add the masala to the rice and mix well and mash it well.


11.So Delicious Kitchdi is ready



Serve hot with some nut based chutney...Here i served it with Peanut chutney



Tip:

1.If you prefer you can add extra tablespoon of ghee while serving.
2.You can also add crushed black Pepper to give some extra hotness.
