Chicken Gnocci Soup (Olive garden style)

Stand alone filling dish for a dinner......If u love olive garden chicken and gnocchi soup,u should try this......


4 tbsp (1/2 stick) butter
1 tbsp extra virgin olive oil
1 cup finely diced onion
1/2 cup finely diced celery
2 garlic cloves, minced
1/4 cup all-purpose flour
1 quart half-and-half
2 (14-ounce) cans chicken broth (if you enjoy a thicker soup, use 1 can)
(or if you don't have broth- 2 cups water + 1 tbsp of chicken bouillon powder)
1/4 tsp italian herbs
1/4 tsp ground nutmeg (optional)
1 cup finely shredded carrots
1 cup coarsely chopped fresh spinach leaves
1 cup diced cooked chicken breast /canned chicken/ rotisserie chicken
1 (16-ounce/500g) package ready-to-use gnocchi


  1. Take a pan and add olive oil and butter and let it get hot,
  2. To that add onions,celery,garlic and saute till onions are translucent.
  3. Then add flour and saute till flour is cooked well and add (if not using stock) water little by little till no lumps there and add bouillon pd otherwise chicken stock.
  4. Then add italian herbs and nutmeg and mix well .
  5. Then add chicken and mix well.
  6. Then add half and half and then carrots and cooked gnocchi .
  7. At the end add spinach and remove from stove.
