MultiGrain(Ragi, Oats ,Urad ,Wheat) Muffin

Ingredients:


Mashed Sweet Potato - 8 oz
Low Fat Milk - 4 oz
Brown Sugar - 1/2 cup (You can add applesauce also for sweetness instead of sugar.You can add extra 1/4 cup of brown sugar or honey or molasses for extra sweetness too)
Egg - 2
Canola Oil - 1/2 cup
Baking Soda - 1 tsp
Baking Powder - 2 tsp
Salt - 1/2 tsp

Method:

1.Line the Muffin tin with liners.Preheat Oven to 325 degree.
2.Mix all the dry ingredients together in a bowl with a whisk.(flour,baking soda, baking powder and salt)
3.In a standing mixer add sugar and oil and cream them together till they are frothy.You can use whisk and bowl too if you don't have standing mixer.

3.Then add sweet Potatoes and mix them well.
4.Then add eggs and vanilla essence and whisk until the whole mixture is frothy.After this step don't use mixer use spatula only.Mix with spatula gently hereafter because over mixing of flour will make a dense hard cake.
5.Add the flour to the liquid and use a spatula to gently stir,just make sure you don't see any lump of dry flour,Lump of wet flour is perfectly ok.Just Combine them till you see all flour wet.DO NOT OVERMIX.


6.Scoop out 1/4 cup of mixture to the liners ,only fill half the cups because it will raise up while baking.Put it in preheated oven in the middle rack in the center for 30 - 35 min turning the tray once at 15 min for even baking.When a skewer or toothpick inserted in the center comes out dry and clean.
7.Once they are done remove from oven and place the muffins on a cooling rack or some support so the under part of the muffin is getting air circulation.
8.One Tip : If you don't have cooling rack just invert the cup cake pan upside down and place the muffins on the edges of two cups like shown for good air circulation for cooling on the bottom of the muffins.
9.I had 4 muffins worth of batter extra so i put it in a cute bowl.


Muffins came out Soft Moist and Fluffy too.......





MultiGrainHealthy Flour For Dosa,Puttu,Muffins

MultiGrainFlour Ingredients:

Ragi Flour - 1 cup
Rice Flour - 1 cup ( i used white ,but you can use brown rice flour)
Durum Wheat Flour - 1 cup
Urad Dhal / Black Lentil Flour - 1 cup
Oats Flour - 1 cup


I use this flour to make Dosa , Puttu , Muffins , kolukattai(Indian Dumplings) ,vada .
This flour is better than other flour because it has
 ragi a good source of iron,
Oats good for heart and help to control cholesterol 
Urad Flour good source of protein .

Broccoli Thuvaran / Broccoli Stir Fry with Coconut

Ingredients:

Broccoli - 9 oz florets ,chop into very very tiny pieces
Coconut - 1/2 cup
Small Onion/Pearl Onion - 1 or Onion - 1 tbsp
Jeera - 1 tsp
Fennel Seeds - 1 tbsp
Turmeric Pd - 1 tsp
Chilly Pd - 1/2 tsp
Curry leaf - 1 sprig
Oil - 1/2 tsp
salt as needed

Method:

1.Grind together coconut,jeera,fennel seeds,small onion to a pulse or two in a blender.
2.Take a pan add oil ,then add mustard seeds ,once mustard seeds splutter add Curry leaf , then the broccoli and turmeric pd.The turmeric powder helps broccoli to stay in bright green color too.
3.Once broccoli is tender and crunchy to eat,Now add the grind mixture and saute it till broccoli s cooked and blended well with spices.
3.Add salt by doing a taste check.Be cautious very little salt is enough as the content of broccoli reduces by cooking add salt very little by little by doing taste test.

Serve this with curd rice.
But i like to have it as a snack too.


Broccoli Roast / Indian Style Broccoli Stir Fry

Ingredients:

Oil - 1 1/2 tbsp
Broccoli - 13 oz
Mustard Seeds - 2 tsp
Onion -4 cups sliced thinly
Turmeric - 1 tsp
Salt - 1 tsp
Fennel Seeds - 1 tsp
Green Chillies - 2 to 3 slit
Tomatoes - 3 sliced
Chilly Pd - 1 to 2 tsp
Water - 1/ 4 cup
Lemon juice - 1 tsp

Method:

Steam Broccoli until they turn bright green and keep them aside.
  1. Take a kadai add 2 tbsp of oil and add mustard seeds,Once they splutter add onions , turmeric pd ,salt ,green chillies , fennel seeds and saute very well till the onions are slightly crisp.
  2. Add Tomatoes and saute for a min.
  3. Add Chilly Pd and add 1/4 cup water and saute well.
  4. Then add broccoli and saute it.
  5. Cover and cook for few minutes until all is incorporated.
  6. Then open lid and add 1/2 tbsp of oil and roast it till all water is evaporated and its little roasted.
  7. Add lime juice and mix well for blending of flavours
  8. Serve hot.

Ingredients:

Broccoli - 8 Oz
Potatoes Cubed - 1 cup
GArlic - 1 clove chopped
Onions Yellow Chopped - 1/2 cup
Milk - 1/2 cup
Almonds Crushed to powder - 1 tbsp
Cardamom Powder - 1 tsp
Low Fat Cheddar Cheese - 1/4 cup
Colby JAck Cheese (optional) - 1 string Cheese
Sugar - 2 tbsp
Salt and Pepper - as needed
Butter - tbsp

Method:

1.Heat Butter in a pan and add onions & garlic and saute it till it till it turns translucent.

 2.Add Almond and cardamom powder now and give it a stir.
 3.Then add potatoes and saute them till its little crisp on outside.
4.Then add water or Stock till potatoes are covered and bring it to boil,then lower flame cover and simmer till the potatoes are thoroughly cooked.

 5.Once the potatoes are cooked add broccoli ,you can use frozen  or steamed broccoli also and mix and cook till broccoli is soft.This is the one time you cook broccoli soft and mushy.


6.Now add milk and give it a stir. Add Salt ,pepper and sugar as needed and do a taste check.
7.Remove from flame and blend the mixture in a blender once its cool or you can use a hand blender to blend it to a fine smooth mixture.

8.Now put in back in low flame and add cheese to the mixture .You can use any cheese of your preference.I like cheddar and i had some colby jack sticks in refrigerator so i used that too.Wait till the cheese melts then remove from flame.


 Serve it Hot with a sprinkle of extra cheese on top

Rotisserie Chicken Stir Fry With Broccoli & Apple

Ingredients:

Broccoli - 8 oz
Chicken Rotisserie Meat - 10 Oz
Coconut Oil - 1/2 tsp
Low sodium Soy Sauce - 1 1/2 tbsp
Chinese Cooking Wine - 1 tbsp
Black Vinegar - 1 1/2 tbsp
Apple Sliced Medium - 1/2 
CornStarch - 1 tbsp
Sugar - 2 tsp
Chopped Garlic - 1 tbsp

Method:

1.Steam Broccoli until it  changes to bright green color ,this may take less than 5 sec.I used steaming tray to prevent broccoli from absorbing water.You can also blanch it in hot water for less than 5 min if you don't have steaming tray.
2.Shred the meat from Rotisserie chicken,i used combination of both dark and white meat.You can use according to your preference.
 3.Heat a pan and add oil ,then add chopped garlic and roast it in a medium flame so you dont burn the garlic.
 3.Then add cooking wine and boil,wait till the amount is reduced to half.

4.Then add soy sauce,vinegar and sugar and boil it a min.

 5.Mix corn starch with 2 tbsp of water and keep ready.
6.Then add the cornstarch to the mixture and stir it continuously to prevent forming lumps and wait till the mixture thickens ,this is our base sauce.

 7.Then add shredded chicken and mix well till the sauce coats on it properly.
8.Then add broccoli and stir once and do a taste check and add seasoning if any more needed and remove from stove .Broccoli is cooked already so don't let it sit on heat too much it will become mushy ,it need to stay crunchy.
9.Once you remove from heat add sliced apples and give a mix for even distribution.

Serve Hot Immediately !!!
